You shouldn't have to wait all year round for Pancake Day and you certainly don't need a pancake mix from a tub! Discover Sophie Conran's simply pancakes recipe for a delicious summer breakfast.

We know how hectic it can be and sometimes trying to find inspiration for more exciting meals can be tricky. Sophie Conran's simply pancakes are exactly that, a simple everyday recipe that is perfect for family breakfasts or delicious desserts. The little ones can even get involved and help with the preparation and cooking! If you're a pre-mixed pancake type of person, don't worry because this recipe contains only a few ingredients and will make around 6 pancakes. If you want more (we don't blame you), then simply double or treble the mix accordingly. 

Simply Pancakes recipe

Ingredients (6 Pancakes)

30g unsalted butter, melted (plus extra for the pan) 

75g plain white flour 

75g plain spelt flour 

325ml whole milk 

1 large egg 

pinch of salt 

Method 

Place the flour into a large bowl, make a well in the centre and drop in the egg. Add half the milk and whisk briskly until all the lumps are gone, add the rest of the milk and the salt and whisk again. Set aside for at least an hour. 

Heat an 8inch pan with sloping sides, or a pancake pan if you have one, over a medium heat. When it’s hot add a small knob of butter, swirling the pan so the butter covers the entire base. Pour in just enough batter to cover the base of the pan in a thin layer, you will need to pick the pan up and swirl it around so that the batter covers all the space.  

Fry for a couple of minutes then flip it over and fry for about 30 seconds on the second side. Remove from the pan and repeat the process until all the mix is gone. Don’t worry if the first one doesn’t work out, it does take a little bit of practice - you’ll be a master in no time!  

Serve with a squeeze of lemon and a sprinkle of sugar or fruit and yoghurt is also a delicious option.
