No matter where you live, there’s always an opportunity to enjoy an al fresco meal, whether it’s on
your balcony, in the garden, or at your local beauty spot. In this blog post we will discuss how to make

A modern al fresco lunch with Sara Miller Tahiti

There’s nothing better than enjoying a beautiful al fresco lunch surrounded by your family – this can
only be made better by throwing in a splash of summer sunshine, a selection of mouth‐watering food
and large glass of red.
When enjoying time with loved ones, it’s important to keep one main thing in mind ‐ don’t spend so
much time in the kitchen that you forget to enjoy the moment. That’s why when hosting an al fresco
lunch, it’s best to create a menu in advance that doesn’t require you spending endless hours cooking
in the kitchen.

Summer salad:

For a simple starter, you can’t go wrong with a fresh summer salad. Start by using your favourite salad
leaves, then top with fridge‐staples including cucumber, peppers, tomoatoes and red onion. For a
simple dressing that can be made in advance, combine poppyseeds, lemon juice, apple cider vinegar,
olive oil, honey and, dijon mustard and salt, for a delciious lemon poppyseed dressing.


Next up for your al fresco lunch you need to make something summery and filling, which doesn’t take
long to cook. Filled with lots of delicious flavours, this easy take on seafood paella is the perfect option.
Taking just 25 minutes to make with just five minutes of prep time, this recipe which will leave you
reminicing of those beautiful holidays in the medditeranean.

To serve four people, you will need the following ingredients:

‐ 1 tbsp olive oil
‐ 1 onion
‐ 110g of sliced chorizo sausage
‐ 1 tsp turmeric
‐ 300g long grain rice
‐ 1l hot fish or chicken stock
‐ 200g frozen peas
‐ 400g of your chosen seafood

To make your paella, follow these simple steps:

1) Heat your tablespoon of olive oil in a deep frying pan
and soften your onion
2) Add the chorizo and fry until the oils within it are
3) Mix in the turmeric and rice, then pour in your chosen
4) Bring to the boil, simmer for 15 mins and stir
5) Tip in the peas and cook for a further 5 minutes
6) Stir in your seafood and heat it through thoroughly
7) Season with salt and pepper, then serve with wedges of lemon

Once cooked, simply place your paella in the middle of the table and allow everyone to help


If you have a sweet tooth and want to finish with a dessert, stick to something refreshing and simple such as a fruit salad, sorbet or a lemon tart.
